These are a great Asian side dish when you need some veggies. Adapted from here.
Here's what you need
- 2 T olive oil
- 2 small garlic clove, minced
- 2 cups brussels sprouts halved lengthwise
- 1 t chili sauce
- Kosher salt
- 1/4 C Asian fish sauce
- 2 T water
- 2 T sugar
- 1 lime, juiced
- 1 small red chile, minced
- 1/4 C chopped cilantro
- 2 T chopped Thai Basil
Here's what you do
- Turn on the broiler
- Heat a skillet over medium hight heat. Working in two groups, add 1 T oil and 1 clove of garlic. Toast for a 2 minutes and add in half the brussel sprouts. Toss occasionally until lightly brown and bright green.
- Once toasty move onto a foil lined baked pan and put under the broiler, in the middle of the oven, for 5 minutes.
- Meanwhile start the next half of brussel sprouts as in step 2.
- After 5 minutes rotate the brussels sprouts under the broiler to get an even toasty-ness. I like these nicely toasted, just short of burnt. Again repeat for second half.
- Once toasty remove spouts and set aside
- In a small bowl, combine the remaining ingredients and stir until the sugar is dissolved. Add the cilantro and mint.
- Add in the sprouts and toss with the vinaigrette.
If you are serving these with the Thai Basil Meatballs, it's nice to pour the remaining vinaigrette over the meatballs.
