Ingredients:
- 2 whole-wheat pita breads
- 1 t kosher salt
- 1 T chopped fresh sage
- 1 lb Turkey tenderloins
- 1 clove of garlic, split
- 2 t olive oil
- Preheat over to 375 degrees. Line a rimmed baking sheet with foil. Place pita bread on the foil and bake until dry and crispy, about 7-10 minutes.
- When the pita breads are cool enough to handle, break them up and grind them into coarse crumbs with a food processor. Stir in salt and fresh sage. Place the seasoned crumbs on a plate.
- Dry off turkey with a paper towel. Rub split garlic clove over the meat. Cut the tenderloin into 1.5" chunks and place a bowl. Add olive oil and, using your hands, mix until the meat is covered evenly.
- Roll each piece of turkey in the season crumbs until well coated and place on prepared baking sheet. Bake for 15-20 min until the turkey is cooked through and no pink remains. Serve warm with dipping sauce.
