Turkey Tenders with Cranberry Yogurt Dipping Sauce

Serves: 4. Hands on time: 30 min. Total time: 1 hour. Cost per serving: $1.30. Full recipe: $5.

Ingredients:
  • 2 whole-wheat pita breads
  • 1 t kosher salt
  • 1 T chopped fresh sage
  • 1 lb Turkey tenderloins
  • 1 clove of garlic, split
  • 2 t olive oil
Instructions:
  1. Preheat over to 375 degrees. Line a rimmed baking sheet with foil. Place pita bread on the foil and bake until dry and crispy, about 7-10 minutes.
  2. When the pita breads are cool enough to handle, break them up and grind them into coarse crumbs with a food processor. Stir in salt and fresh sage. Place the seasoned crumbs on a plate.
  3. Dry off turkey with a paper towel. Rub split garlic clove over the meat. Cut the tenderloin into 1.5" chunks and place a bowl. Add olive oil and, using your hands, mix until the meat is covered evenly.
  4. Roll each piece of turkey in the season crumbs until well coated and place on prepared baking sheet. Bake for 15-20 min until the turkey is cooked through and no pink remains. Serve warm with dipping sauce.
