We made these at Christmas, and I really liked them. I'm not supposed to eat wheat anymore, so technically I can't eat these. They are good enough though, that I wish I could. For a change on this, try this Smoky Chicken Corn Cake from Real Simple.
Ingredients
- 1C cornmeal
- 0.5 C flour
- 1 t salt
- .75 t baking soda
- 1 large egg
- 1 C buttermilk
- 2 T melted and cooled unsalted butter
- 1 C frozen, thawed corn
- 0.5 C diced onion
- 1 C grated Monterey Jack
- vegetable oil or cooking spray
- Sour cream
Directions
- In one bowl combine the first four ingredients.
- In a second bowl mix together the egg, buttermilk, and melted butter. Stir the wet into the dry.
- Add in corn, onion, and cheese.
- Heat 0.5 t vegetable oil or spray cooking spray into a heated pan, medium heat.
- Drop 2T batter into the pan at a time. Flip after 2 minutes and cooking one more minute.
- Serve with sour cream.
