Corn Cakes


We made these at Christmas, and I really liked them. I'm not supposed to eat wheat anymore, so technically I can't eat these. They are good enough though, that I wish I could. For a change on this, try this Smoky Chicken Corn Cake from Real Simple.

Ingredients

  • 1C cornmeal
  • 0.5 C flour
  • 1 t salt
  • .75 t baking soda
  • 1 large egg
  • 1 C buttermilk
  • 2 T melted and cooled unsalted butter
  • 1 C frozen, thawed corn
  • 0.5 C diced onion
  • 1 C grated Monterey Jack
  • vegetable oil or cooking spray
  • Sour cream

Directions

  1. In one bowl combine the first four ingredients.
  2. In a second bowl mix together the egg, buttermilk, and melted butter. Stir the wet into the dry.
  3. Add in corn, onion, and cheese.
  4. Heat 0.5 t vegetable oil or spray cooking spray into a heated pan, medium heat.
  5. Drop 2T batter into the pan at a time. Flip after 2 minutes and cooking one more minute.
  6. Serve with sour cream.
